A large yellow-coloured, firm and crunchy pickle of medium saltiness, takuan is made from daikon, the giant white or icicle radish.
It is pickled in dry rice bran after being hung to dry for two to three weeks. Takuan takes several months to mature, but once made keeps for many months. Traditionally takuan was coloured yellow using tumeric, although today artificial colourants may be used. It is usually sliced and served as a side dish or cut into batons for sushi roll fillings. It has a very pungent smell.
